Sunflower Lecithin 1 lb Baggie

I saw lecithin at a bulk food store and wondered 🤔 what how it's used. I'm happy with the sunflower lecithin I got from Bread Beckers. I appreciate it that the label says to refrigerate or put in the freezer.
